The Gao Family’s Beef Soup in Chahua Town, originated in the reign of Emperor Daoguang of the Qing Dynasty, has been popular for nearly 200 years. The inventor was Gao Jiancai’s father. Gao Jiancai was originally a butcher and sold beef for a living. Without proper ways to preserve unsold beef at that time, Gao and his father made beef soup to prevent it to go bad. They used a special pot whose diameter was longer than one meter and covered it with a vat with no bottom to cook hundreds of pounds of beef at a time for more than ten hours. The fragrant beef soup tastes flavorful and the beef is still tender. When beef soup cools down, a thick jelly-like layer will form on top of the soup. Because of its unique making process, the soup has been favored by the local people, and has gradually become a famous specialty. The irresistible delicacy is popular in the Huanghuai region (the Yellow River and Huaihe River areas), including Anhui, Shandong, Jiangsu, etc.
